Green bananas are mainly made up of resistant starch, also classified as dietary fiber. We humans don’t have the enzymes to break down these resistant starches; therefore, this is where our gut buddies come in handy. They absolutely love to feed on this stuff!

The resistant starch passes through our small intestine since it cannot be digested and travels down to the colon, where it gets broken down and fermented by your gut microbes. During ripening, the starch is converted into simple sugars (sucrose, glucose, and fructose), increasing its sugar content to about 14 grams for a single medium ripe banana.

Therefore, these muffins are not only easy to make and delicious, but they also support a healthy gut, so let’s get baking!

Ingredients

Instructions

  1. Preheat oven to 400F
  2. Place all ingredients except topping in a  blender and blend until smooth.
  3. Line a 6 large muffin pan with baking cups and fill 3/4 of the way.
  4. Sprinkle with your favorite toppings.
  5. Bake for 15-18min, until toothpick, comes out clean.
  6. Remove from oven and let cool. 

Notes:

May sub almond butter for tahini or any other nut butter.

You can also make small muffins in a 12 cup pan. Bake for 8-10min.
